PESTO
1/2 clove garlic
1 tsp. salt
1/2 cup cooked and cleaned fava beans
1/4 cup quality extra virgin olive oil
TARTARE
4 oz. diced tuna (sushi grade)
1 tsp. quality extra virgin olive oil
1 tsp. minced shallots
1 tsp. chopped basil
Zest of one orange
GARNISH
1 tsp. preserved lemon
1 tsp. picholine olives
MIX
Mix and crush fava beans with olive oil and garlic
Mix all ingredients of tartare
